Pineapple-Zucchini Bread
3 eggs
1 cup oil
2 cups sugar
1 teaspoon vanilla
3 cups flour
2 teaspoons baking soda
1/2 teaspoon baking powder
3/4 teaspoon nutmeg
1 1/2 teaspoon cinnamon
1 teaspoon salt
2 cups shredded zucchini
8 ounces drained crushed pineapple
1 cup chopped pecans
1 cup raisins

Beat eggs, oil, sugar and vanilla
until smooth. Add flour, baking soda, baking powder, cinnamon, nutmeg,
salt and then add zucchini, pineapple, pecans and raisins. Bake
in 2 (9x5-inch) loaf pans at 350F for 45 minutes. |
Country Pecan Muffins
1 1/3 cup flour
1 cup chopped pecans
1/2 cup brown sugar
2 teaspoons baking powder
Salt
1/2 cup milk
1/4 cup butter
2 eggs
1/2 teaspoon vanilla

Combine, flour, pecans, brown sugar,
baking powder and salt. Make a well in center of mixture. Add milk,
butter, eggs and vanilla. Stir until moist. Spoon batter into pans.
Bake at 350F for 20 to 25 minutes. Yields 15 muffins. |
Cranberry Pecan Bread
3 cups flour
1 cup sugar
1 tablespoon baking powder
1/4 teaspoon salt
2 beaten egg whites
1 1/4 cup skim milk
1/4 cup vegetable oil
2 teaspoons grated orange peel
1 1/2 cup chopped cranberry
1/2 cup pecans

Preheat oven to 350F. Spray 9 x 5
inch loaf pan with cooking spray. In large bowl stir flour, sugar,
baking powder and salt. In a small bowl combine egg whites, milk,
oil, and orange peel. Add liquid mixture to flour mixture; stir
until combined. Stir in cranberries and pecans. Pour into pan. Bake
for 1 to 1 1/4 hours. Yields 1 large loaf. Yields 16 servings. |
Pumpkin Nut Bread
4 eggs
1 teaspoon baking powder
3 cups sugar
1 teaspoon baking soda
10 1/2 ounces canned pumpkin
1 1/2 teaspoon salt
1 cup salad oil
1 teaspoon cinnamon
1 cup chopped pecans
1/2 teaspoon nutmeg
2/3 cup water
2/3 cup raisins
3 1/2 cups flour

Mix all ingredients together well.
Bake in 2 greased 9 x 5 inch loaf pans for 45 minutes to 1 hour
at 350F. |
Banana Nut Bread
1/2 cup butter
1 cup sugar
1 teaspoon salt
2 cups flour
1 teaspoon soda
3 mashed bananas
2 eggs
1 cup chopped pecans
1/2 cup milk

Cream butter and sugar. Add salt.
Add eggs. Sift flour and soda together. Add bananas and mix well.
Pour into 2 greased loaf pans. Bake at 350F for 1 hour. |
Pecan Bread
2 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter
3/4 cup sugar
2 eggs
1 1/2 teaspoon vanilla
1 cup milk
9 ounces condensed mincemeat
1 cup toasted pecans

Combine flour, baking powder, baking
soda and salt. In large bowl beat butter and sugar until fluffy.
Beat in eggs and vanilla. Add milk to flour mixture; mix well. Stir
in mincemeat and pecans. Pour into a 9 x 5 inch loaf pan. Bake at
350F for 1 hour and 25 minutes. After 1 hour, cover with foil to
prevent overbrowning. Cool. |
